Knowing her way around the kitchen, she can put together a mean braised fork tender rack of ribs. She tries not to be too mean if you don’t end up liking them. Dean. The 'knows just about anything and everything' project manager. He can discuss the ins and outs of how to make while also cooking some kick-ass Caribbean food. Watch out for the beef patty that gets tossed your way if he catches you not paying attention! While we might be able to cobble together a decent meal and know a thing or two about running a business, by no means are we anywhere close to being considered experts in Indian food. Enter Kamaljit Singh. What we didn't realize, as tweens eating at our favorite San Fernando Valley Indian haunts enjoying his masterfully prepared curries and tandoor based specialties, was that he, much later on in our lives, would become our friend, team partner, and esteemed chef. Given that Mr. Singh has launched many well known Los Angeles Indian restaurants (most recently Nawab Cuisine of India and Bombay Cafe), he has knack for well executed age old recipes while adding his own flair to the dishes--a California tinged 'lighter' twist to the often times greasy spoon cuisine. In the age of the foodpreneur, it was only a matter of time before the four of us would get together to launch the newest Indian food concept The Bombay Frankie Company. Sure it's a mouthful. But so is our signature Frankie. It starts with a tandoori oven freshly baked naan followed by a ‘years in the making’ chickpea spread, jeera turmeric potatoes, chicken or paneer tikka, crisp cucumbers, diced tomatoes, pickled red onions, house made raita, a sprinkle of cilantro, some mint chutney, a tamarind chutney drizzle, and finally a dash of mint chutney crema. We encourage you to eat slowly because every bite deserves time to take in all of the flavors that will be bombarding your tastebuds from start to finish. But don’t even think for a second that our scratch made signature curries, fresh vegetables, ‘straight out of the tandoor oven’ chicken and paneer deserve any less attention. Have them over jeera rice or with plain/garlic naan or even a whole wheat paratha. And if you’ve got some dietary restrictions, we totally get it! Gluten free? Simply omit any of the breads. Vegan? In addition to the above, we’ve got you covered with plenty of fresh vegetables and lentils. Long live the #bombayfrankie! |
